GOURMET SMOKED SAUSAGE MAC & CHEESE

Ingredients

·         4 PC Favorite Queen City Sausage.  Sliced and quartered

·         6 OZ Bacon

·         1 LB Cavatappi pasta

·         4 TBS Unsalted butter

·         4 TBS All-Purpose flour

·         4 Cups Whole milk

·         8 OZ Fontina cheese.  Grated

·         8 Oz Gruyere cheese.  Grated

·         4 OZ Blue cheese

·         2 Cloves grated garlic

·         2 OZ Olive oil

·         1 TBS Dijan mustard

·         1 TSP Hot sauce

Directions

1.       Cook pasta according to package instructions

2.       Brown the sausages in olive oil

3.       Fry the bacon and dice

4.       Remove the bacon but keep the grease.  Add butter then flour to make roux.  Whisk until smooth and cook for 2-3 minutes

5.       Add the cheeses, then mix in pasta, sausages, and bacon with the roux on low heat
