CORN & BLACK BEAN SALSA with SMOKED SAUSAGE CRUMBLES

Ingredients

·         2 Links—Queen City Sausage’, Smoked Sausage.  Diced or chopped fine

·         15.5 OZ Black beans, drained and rinsed

·         15.5 OZ Corn.  Drained

·         2 Green onions.  Sliced thin

·         1 Tomato, diced

·         4 OZ Shredded mozzarella

·         1/3 Cup Olive oil

·         3 TBS Red wine vinegar

·         3 TBS Hot sauce

·         1 Clove of garlic, minced

·         ½ TSP Chili powder

·         2 TBS Cilantro.  Chopped fine

·         ¼ TSP Salt

·         ½ TSP Ground pepper

Directions

1.       Large bowl.  Mixed together the oil, hot sauce, vinegar, garlic, garlic, cilantro, salt and pepper.  Add sausage crumbles, beans, corn, tomato, and onions.  Blend well.  Cover and refrigerate for 45 minutes or so before serving

2.       Top with cheese and serve
