Sugar Snap Peas with Cottage Ham

Ingredients
1 LB Queen City Sausage’ Smoked Cottage Butt (Ham). Small chunks
2 LBS Sugar Snap Peas. Ends trimmed
2 Medium shallots. Thinly sliced
1 Clove minced garlic. Minced
2 TBS Olive oil
2 TBS Butter
1 TBS Honey
Salt and pepper
Yields 4-6 Servings


Instructions
Medium non-stick skillet. Medium heat. Add the olive oil, shallots, and Sugar Snap Peas. Let peas soften. Season with salt and pepper. Add the butter, garlic, and honey. Just before serving, add the Smoked Cottage Butt (Ham), gently warm and serve immediately. Do not over cook the Cottage Butt.
