Roasted Sausage and Egg Sheet Pan Oktoberfest Brunch

Ingredients
3 Links Queen City Sausage Bratwurst. Slice into ½ inch pieces
3 Links Queen City Sausage, Smoked Sausage (Metts). Slice into ½ inch pieces
5 LB Redskin potatoes. Quartered
1 LB Brussels Sprouts halved
6 Large eggs
3 Shallots. Slice ¼”
4 Garlic cloves, peeled and diced
¼ Cup Olive oil
1 TSP Blk pepper
½ TSP Sea salt
1 Small bunch of kale
Yields 4-6 Servings


Instructions
Preheat oven to 425 degrees F and line an 11” X 17” rimed sheet pan with parchment paper. Add olive oil evenly. Add potatoes, Brussels sprouts, shallots, salt, pepper, and garlic. Bake for about 25 minutes to soften potatoes and remove momentarily. Disperse the kale into the mix. Crack the eggs on top of the mixture. Bake for 7-9 minutes to ensure the eggs are cooked.
