Smoked Sausage and Chicken Tortellini

Ingredients
2 Links—Favorite Queen City Sausage—Sliced ¼” Thick
½ Rotisserie Chicken (Used Sam’s)
16 OZ Spinach Tortellini
8 OZ Fresh Spinach
½ Red Onion–Diced
2 TBS Butter
2 TBS Diced Garlic
½ TSP Pepper
½ TSP Salt
4 OZ Asiago Cheese Flakes
32 OZ (1 Quart) Water
Serves 4-5


Instructions
Medium skillet, medium heat. Add the water and heat to simmer. Add the entire 1/2 chicken, bones included. This creates the broth and heats the chicken. Reduce heat to medium-low. Cook for 30 minutes. Remove the chicken. Pull the meat from the bones and add back to the skillet. Discard bones. Add the onions, butter, pepper, salt and garlic. Add the tortellini. Stir in to soften. Add spinach. Cover on low heat for 10 minutes and serve. Garnish with cheese.
