Sausage Basil Pesto Toast with Fried Egg Topper

Ingredients
1 Pack, 14 OZ Queen City Sausage Wicked Jalapeno Sausage, diced
6 PC Whole Grain Toast. We used Dave’s Killer Bread-21 Whole Grains and Seeds
6 Large Eggs
10 OZ Yogurt. We used Greek Gods, Honey Vanilla
8 OZ Basil Pesto or favorite pesto
1 Medium Red Onion, sliced
2 OZ Olive Oil
Ground Pepper
Yields 6 Servings


Instructions
Medium, non-stick skillet. Medium heat. Brown the sausage slices in olive oil. Remove and keep warm in foil. Fry the eggs, sunny side up. Toast the bread. Add the yogurt to the toasted bread. Spread evenly to cover. Add the pesto. Add the onions. Add the sausages. Add the fried eggs.
