Cast Iron Goettalicious

Ingredients
1 LB. Queen City Sausage Goetta. Sliced into 1.5” patties
2 LB. Red skin potatoes. Sliced into wedges
8 OZ Shredded Cheese. Use your favorite: Cheddar. Swiss
3 OZ Olive oil

For the Gravy
Hold aside 2 browned goetta patties. Crumbled
2 TBL Butter
1/3 Cup flour
2 ½ Cup milk
¼ TSP Sea salt
1 TSP Coarse ground pepper
Serves 4


Instructions
Medium-large cast iron skillet—medium-low heat. Brown the goetta thoroughly and set aside and hold warm. Add the oil, potato wedges, fry slowly. Cover to hold heat. Add small amount of water if needed to steam. Gravy: Add melted butter, sausage crumbles to a low heated pan. Sprinkle in flour and stir completely. Slowly pour in milk, stirring constantly. Add salt and pepper. Keep covered and warm. Pour the sausage gravy over the soft potatoes. Cover the potatoes and gravy with cheese. Top with the goetta patties and serve immediately.
