The Croque Monsieur

The Croque Monsieur

This is a homemade recipe that is sure to please!



  • ¾ LBS. Queen City Sausage Premium Smoked Ham. Sliced thin
  • 8 Slices of thick bread
  • 3/4 LB Grated white cheddar cheese
  • 4 Large eggs
  • 1 ½ Cups of whole milk. Heated
  • 2 TBS. Butter
  • 2 TBS Flour
  • 2 TBS Olive oil
  • Mustard
  • Salt
  • Pepper


  1. Melt the butter in a medium saucepan. Stir in the flour and cook on medium-low, stirring constantly until the paste cooks and slightly bubbles.  Do not let the mixture brown.  About two minutes
  2. Add the hot milk and continue stirring. Sauce thickens.  Bring it to a boil.  Add salt and pepper.  Lower the heat and keep stirring for 2 minutes
  3. Remove from heat. Cover
  4. Add 2/3 of the grated cheese.   Consistency should be thick, yet pourable


  1. Medium skillet. Medium -low heat.  Add 4 slices of bread.  Add mustard evenly to each slice
  2. Add ham
  3. Add remaining cheese
  4. Add 4 remaining slices of bread
  5. Fry 4 eggs sunny side up in a separate skillet
  6. Pour the cheese mixture over the assembled sandwich
  7. Top the sandwiches with the fried eggs and serve
