Goetta Breakfast Skillet Casserole

One skillet. Just a few key ingredients. Wow!

 

INGREDIENTS

  • 1 LB Roll Queen City Sausage Goetta
  • 1 Each, 15 OZ Can of Black Beans. Drained
  • 8 OZ Shredded Mozzarella Cheese
  • ½ Yellow Onion. Diced
  • 2 TBS Olive Oil
  • 1 TBS Ground Pepper
  • 1 TBS Corn Starch
  • 1 TBS Butter
  • 1 TSP Crushed Red Pepper (Optional)
  • 1 TSP Minced Garlic
  • 1 TSP Sea Salt

DIRECTIONS

  1. Medium, non-stick skillet. Medium heat
  2. Add olive oil, diced onions, pepper, crushed red pepper, garlic, and salt to skillet
  3. Slice goetta into patties or chunks. Add to heated skillet. Brown
  4. When goetta browns thoroughly, break up into ½” chunks. Remove and hold in foil to retain heat and moisture
  5. Crack 10 large eggs into a bowl. Add corn starch to thicken. Whisk well
  6. Using the same skillet, coat with butter, medium-low heat
  7. Add the whisked eggs to the skillet. Add the black beans evenly
  8. Add the goetta mixture, then top with the cheese
  9. Cover. Let mixture slowly form, then serve immediately
