Astonishing Bologna Breakfast Cups

We knew we had incredible bologna, but this recipe took it to the next level.



  • 12 Medium to Thin, Slices of Queen City Sausage Garlic Bologna
  • 12 Large Eggs
  • Salt and Pepper Dusting
  • 6 OZ Shredded Sharp Cheddar Cheese
  • 3 OZ Diced Pepper Rings


  1. Preheat oven to 350 degrees
  2. Using a muffin tin, spray with cooking oil and place the bologna slices in the pockets
  3. Using a fork, beat 8 eggs to scramble. Pour into 8 cup/bologna slots
  4. Crack the remaining 4 eggs into the remaining slots
  5. Bake in oven for 12 minutes. Remove to add cheese
  6. Place back in the oven for 2-3 minutes

Note: The unscrambled eggs may require 20 seconds additional in the microwave
