Astonishing Bologna Breakfast Cups
We knew we had incredible bologna, but this recipe took it to the next level.
INGREDIENTS
- 12 Medium to Thin, Slices of Queen City Sausage Garlic Bologna
- 12 Large Eggs
- Salt and Pepper Dusting
- 6 OZ Shredded Sharp Cheddar Cheese
- 3 OZ Diced Pepper Rings
INSTRUCTIONS
- Preheat oven to 350 degrees
- Using a muffin tin, spray with cooking oil and place the bologna slices in the pockets
- Using a fork, beat 8 eggs to scramble. Pour into 8 cup/bologna slots
- Crack the remaining 4 eggs into the remaining slots
- Bake in oven for 12 minutes. Remove to add cheese
- Place back in the oven for 2-3 minutes
Note: The unscrambled eggs may require 20 seconds additional in the microwave
